The Captain and I have started following a low-carb diet. Luckily, The Captain came across a video of someone making cabbage bread and suggested I try it. The original recipe I watched used about 2 cups of cabbage, one egg, salt and pepper. I followed those measurements for my first attempt at making cabbage bread, and it turned out well. However, in my subsequent attempts, I adjusted the amount of cabbage. Now, I use 60 grams of cabbage and one large egg. Furthermore, I skip the salt and pepper since I prefer to add those to the sandwich or the meal I’ll make with the ‘bread.’

- Omega-3 or pastured eggs lower triglycerides

Low Carb Cabbage Bread
Ingredients
- 60 grams cabbage
- 1 large egg
Instructions
- Finely shred the cabbage with a mandoline, peeler or knife.
- Place cabbage in a medium/large bowl and add egg (and a little salt and pepper to taste).
- Using chopsticks or a fork, whisk the egg and cabbage until the egg is frothy.
- Spray a frying pan with a little oil and add the cabbage mixture.
- Spread the cabbage mixture evenly.
- Cook for about 3 minutes on each side.
Refrigerate until ready to use. Cabbage bread can be refrigerated for up to three days. To cool quickly to use as sandwich bread, pop it in the freezer for 15 minutes.
Serving suggestions
Make a sandwich using your favourite sandwich ingredients. Mine is roast chicken, crispy bacon, lettuce, tomato, mayonnaise, salt and cracked black pepper.
Use the hot bread as a warm, open sandwich topped with your favourite sandwich ingredients such as ham, tomato, cheese, and cracked black pepper.
Top the cabbage bread with your favourite pizza ingredients and grill or cook in an air fryer.
