I made these oysters for Dwayne after we collected a few from the rocks on a picturesque island in the Great Barrier Reef. I use odd shells that I have been gathering to grill the oysters in (as you can imagine, it is not easy to get oysters on the half-shell when getting them from the rocks).
This is what I did…
I sauté a little finely diced garlic, added some white wine and simmered to reduce. I remove the pan from the heat and add some cream.
I placed an oyster in each shell and poured a little of the garlic cream sauce over, then I topped each with a slice of camembert cheese. Add cooked them under the grill until the cheese melted and started to brown.
Another one of Dwayne’s favourites!
